Green Mexican Salsa


  • 1 stick of celery

  • 1 Lebanese cucumber

  • 2 Shallot

  • 1 tsp of finely chopped fresh dill

  • 2 tsp finely chopped coriander leaves

  • 2 tsp Finely chopped parsley

  • Juice of 1 lime

  • 1 tbsp olive oil

This is delicious with fresh homemade fish tacos, if there is any leftover I can highly recommend putting it on top of your eggs for breakfast. Method

  • Finely dice the celery, cucumber and shallot

  • Finely chop the herbs

  • Mix together, squeeze in the lime juice, and pour on the olive oil and mix until combined
