Herbies Dukkah


This is delicious Egyptian nut and spice blend, and oldie but a goodie. This recipe is from the culinary spice guru Ian Hemphill, aka "Herbie". It is delicious sprinkled through salads, on roasted vegetables or with hummus.


Ingredients

  • 3 1/2 tbsp hazelnuts

  • 4 tbsp pistachio nuts

  • 10 tbsp white sesame seeds

  • 5 tbsp ground coriander seeds

  • 2 1/2 tbsp ground cumin

  • 1 tsp salt

  • 1/2 tsp ground black pepper




Method

  • Process nuts until small, being careful to not over process or you will end up with nut butter.

  • Separately grind the spices to a powder

  • Mix the ground nuts, spices and whole sesame seeds together

  • Store in airtight container in fridge
