Immune Boosting Broth


  • 1 litre of chicken stock

  • 2 cloves of fresh Australian garlic

  • knob Ginger (roughly the size of a dice)

  • 2 shiitake mushrooms

  • 1 tablespoon of tamari

  • 1 cup bean shoots

  • 1 cup fresh kale, silverbeet or spinach leaves

  • chilli (Optional)

  • 1/2 cooked chicken breast shredded


  • Heat the stock in a pot and bring to a simmer

  • Crush the garlic

  • Chop the ginger into fine match sticks

  • Slice the shiitake mushroom

  • Roughly chop the greens

  • Add the garlic, ginger, chilli (if you are using it), shiitake and tamari to the stock and simmer 10- 15 minutes

  • When you are ready to serve, place the bean shoot, leafy greens and shredded chicken into a soup bowl and ladle the soup over the top.

  • You could also add some fresh herbs like Vietnamese mint or coriander if you like
