Shakans’ Salad Dressing
1 dessert spoon Tahini
1 glove garlic crushed
1 small knob ginger - Grate finely and squeeze juice on to tahini discard pulp
Pepper freshly ground
50 ml Apple Cider vinegar
200 ml Olive Oil cold pressed
Place your tahini, crushed garlic, ginger juice and apple cider vinegar in your mixing bowl. Stir together with your whisk.
Slowly add olive oil whisking thoroughly so your mixture emulsifies
If your mixture gets too thick add 1 tablespoon warm water to thin it out
Season with salt and pepper to taste
This is my favourite salad dressing. I met Shakan while I was travelling in New Zealand when i was in my 20's and he was kind enough to share it with me. It’s delicious.
